Dang

I forget my veggie for breakfast this morning. I was going to cut on some cucumber, but I just plum forgot. Now I'm trying to decide if I should just claim the loss or make up for it by having two veggies for lunch or dinner tonight. Other than that the veg up challenge has been going well. I made cooked carrots for the first time in my life on Sunday night. Still not my fav, but I think I overcooked them, maybe need to try again. Tonight we're going out to dinner, so I am a bit stuck at the mercy of what's available on the menu!

I really don't mind vegetables anymore and kind of like them, except boiled carrots.

Have you tried microwaving broccoli. Top with a little cheese and fresh pico de gallo. Maybe a little grilled chicken.
